"Taggiasche" Olives in Brine of "Il Casale"
Oliva Taggiasca is a particular cultivar present only in western Liguria from Albenga to Ventimiglia.
Its characteristic is to obtain an oil with delicate, bitter and spicy fruity aromas of slight intensity, but with marked hints of sweet that recall the taste of dried fruit and pine nuts.
Unlike oil, with a more delicate taste, with the same olive used in brine we get a unique product, recognized nationally and worldwide, in fact this small fruit has a very intense taste, a pleasant crunchiness and a total spiccagnolo, or the pulp comes off the core easily and totally.
